I have a 2007 Honda Pilot and the gas pedal does not have much give, only about an inch and when I press the gas it goes but slowly.

Check for interference like carpet or something else in way then have a pro check to see if the electric unit is bad or going bad as the gas pedal is electric now. It may throw a check engine code as well.

Thanks so much for your response but there is no obstruction that I can see. My mechanic only drove it and thinks I need a transmission flush but I don't know if that will fix this

A transmission flush will not help a gas pedal problem if it is truly that. If it's a trans problem then that is something else entirely. If the gas pedal moves freelylike with engine shut off then it may be a trans problem like a slipping clutch pak or something like that I'd have a trans guy look at it.
