I am having trouble removing the rear disks. I have removed the safety brake cable and still cannot remove the disk and cannot adjust to be able to remove.

Use slide hammer hooked in the vent vanes or use screw drivers and turn and pull, really really hard if necessary. I do not believe it is possible to adjust so it is not difficult to remove.
