1997 GMC Sierra running out of ideas

my truck starts rough cold or hot. i have replaced all for 02 sensors fuel pump pressure regulator fuel filter cleaned the throttle body cleaned the injectors. put on a new map sensor and crankshaft position sensor . new wires cap rotor and ignition coil still having same problem. also when driving if i get on it it hesitates and will not downshift and the rpm gauge goes crazy. not giving me any codes and my fuel pressure is where it should be . dont know what to do with it at this point.

Clean the idle air control valve and EGR valve and test the throttle position and vehicle speed sensors-
