What is the problem if you accelerate from a stop position and when you press the gas, it sputters (like the engine is trying to stall) if you try to take off at a fast rate?

If you slowly give it gas will it go smoothly up to speed? is it fine say you cost down to 5mph then gun it and go back up to 65?
