I am trying to remove the fuel pump, do the wire connectors come off the fuel pump housing?

There should be a short harness to the housing outside the tank. Then once you get the pump assembly out you replace just the pump and regulator assembly. There should be two wires with screw terminals.

There are four wires and a ground wire that attaches to the top plate with two hoses as well.

There are two wires that feed the pump and two for the level sender. The ground is for all of them including static reduction.
The unit comes out of the tank with all of those on it. Then you replace the pump itself.
