If it runs rough like that it's possible it has set a fault code. It sounds like some type of fuel delivery problem. Is the check engine light on or has it been flashing when this happens? If so then the first thing to do is check the codes stored in your trucks computer. If you don't have access to a scanner or code reader most auto parts stores have a tool loaner program and can rent you one. Auto parts stores like AutoZone will check codes for free. Here is a tutorial showing what is involved for retrieving codes:
