I have the steering knuckle off the vehicle and the old bearings need to be removed and the new installed of course. What is the best course of action to do that and do I need to replace the hub assemble as well?

That bearing has to be pressed in and out of that knuckle assembly. I suggest you bring the bearing and the knuckle to you local auto machine shop and let them do it. The charges are minimal and they can be a nightmare to change if you don't have the right equipment.
