My thermostat gauge doesn't respond until about 30 minutes of drive time. then the guage reads the temp. Is this a sensor problem?

first check the thermostat to ensure it's not stuck open, if it is it may be cooling engine down too much. if thermostat is OK then test the engine coolant temp. sensor
