2003 Ford Taurus White smoke or steam from under hood...

Engine Cooling problem
2003 Ford Taurus 66700 miles

There is white smoke (or maybe steam) that comes from under my hood, around the area of the radiator and AC condenser. I took it to my mechanic after it did it to me 3 times and he had it for several days and could not get it to replicate the incidents. The car is not over heating and seems to be running normally. I have had the car all day and have not had any problems with it thus far, but I am worried that the thermostat is stuck (open or closed) or the water pump is failing or a head gasket problem. We checked for leaks and found none. Also, there is not white smoke coming from the exhaust, no burning smell, or sweet smell (anti-freeze).

Consider checking the AC system
as it may leaked AC gas
if engine not overheating and coolant not down and pressure test revealed no leak
we have to assume all OK until it happen again if it did
