1996 Ford Taurus engine smells

MY car emits white smoke after about 3-5 miles but my guage isnt showing that it is overheating. It smells kind of sweet, like maple syrup. All of my fluids are filled (most new). The engine is rebuilt and has less than 10,000 miles on it; and the transmission was also recently rebuilt

Go back to who rebuilt it. Either the head gaskets or intake gaskets are leaking or you have something cracked. Don't allow it to run out of warranty.
