2006 Ford Ranger Engine Light Came On, Power Comes in Spurt

While doing 65 up a hill with the cruise control on, I noticed the "check engine" light came on. As I came to a stop, the whole truck started juddering and stuttering like it wanted to stall (it didn't). I checked the oil and it was bone dry, so I put 5 quarts in and started her up again. Same problem. Only this time, as I tried to pull away, there was no power whatseover from the gas pedal, and it only kicked in after pumping my foot on it a few times. But then the whole drive home, the acceleration kept dropping, then coming and going in spurts, all the time with the truck stuttering and vibrating. The truck particularly lost power when going uphill. The temperature stayed cool, no oil leaking anywhere, I'm at a total loss. Wife thinks it could be some kinda blockage in the fuel injector... no idea. Can anyone offer me any advice, please?
