1998 Ford Ranger Clutch free travel

I have a ford ranger I purchased recently from a friend on mine that had it since new. he has a business that takes his trucks all over the U.S. So all highway miles. Just before I bought this the transmissin was completly rebuilt along with a new clutch assembly about 8000 prior to my buying it. But the clutch edal goes just about 1/2 way to the floor b4 it engages making it hard to shift along with when the trucks rpm goes to about 2700 rpms it lacks power. I feel this is due to the clutch adjustment is way to much. What is the best way to adjust this clutch?
