1989 Ford Probe 1989 Ford Probe: Drop in acceleration and g

I have neglected this issue long enough. I have 1989 Ford Probe GL with a 5 spd.
For the past 6 months my car has lost approximately 10 mpg (now gets 25 mpg when it got 35 previously). It almost feels like it is missing but and when it first started happening the RPM would move around. Now the RPMs are fine but it is doesn't accelerate well and the exhaust sounds like it's sputtering.
My two guesses for what is wrong with it is:
-Catalytic Converter
-Mass Air Flow Sensor

Any guidance would be greatly appreciated.

with 230,xxx miles. how long has it been since you had a tune up?

The car had a tune up less than 5,000 miles prior. It had the timing belt replaced, water pump, spark plugs, spark plug wires.

E3 Spark Plugs.. I want to say the old plugs had a lot of white ash color look to them.
