1989 Ford Mustang oil pressure

i have a 1989 mustang i recently had the engine rebuilt since having this done i have broken the oil pump shaft and had to replace the oil pump. my oil pressure usually stays @60 psi while driving and @ about 55 when idiling. yesterday my oil pressure started acting crazy . it dropped all the way down to about 10 psi . i turned the car off and turned back on and the the pressure went up to about 20 psi . i checked the to see if i had oil and it was full. I reved the engine up and the pressure went back to 60psi but it drops up and down drasticly with the change of rpms

Oil pressure does change with RPM, Ford spec says at 2200 RPM pressure should be 40-60 PSI...
