1961 Ford F-100 i dont know what the problem is

Electrical problem
1961 Ford F-100 V8 Two Wheel Drive Automatic

i just got a new battery and voltage regulator, and the battery is maintaining 12volts when the truck is running, but when i take the red( i think its positibe) cable off of the battery, the engine dies. this is a problem because im pretty sure that the alternator should be able to keep the truck running without the battery. can you help me out?

Try adjusting the voltage regulator there's a way to do it but couldn't remember-sorry no references to go by-its in the book
