2007 Ford Explorer False Oil Dipstick Reading

After normal oil change (drain, filter replacement) I inserted 5 qts of new oil (capacity if 5 qts). After short engine run, with engine shut down dipstick read about 3 inches above full indication. Drained new oil and reinserted 4 qts and dipstick still read 3 inches too much. Ran engine and let sit overnight...still reads 3 inches too high. Hmmm.
Note after oil drained, it still read 3 inches too high.
Question: How should I ensure capacity hasn't been exceeded (don't want oil foaming) or shorted (don't want inadequate lubrication) with an oil dipstick reading that must be faulty? I have a long distance trip comiing up.
