I have a 1994 explorer that has not been cranked or driven for at least 2-3 years. What should I do before I crank it and drive it around?

I would suggest that you check all fluid levels first.
Check the level of antifreeze protection (no antifreeze can cause a cracked block or head).
Next, I would start the engine and let it idle up to operating temperature. Go gently. Then I would change the oil before driving it around.
