How do you remove the top plastic intake to replace gaskets and does anything need to be tighten with torque wrench. My main question I guess is can this be done at home or better to be done by pro.?

That really depends on your ability. It's not a real easy job, mainly because everything is so hard to access. Yes, everything has to not only be torqued but tightened in the right sequence also. The aftermarket manifolds come with the gasket built in and tightening instructions.
