2000 Ford Excursion Any need to mess w/ 4 wheel drive hubs

I took my truck to have after market tires installed, everything was fine until I took the truck on a road trip. Traveling at 75 MPH the drive shaft and transfer case binded up because I was unknowingly driving in 4 wheel drive. Took truck to Ford and they said that the mechanic that installed my tires forgot to unlock the outside hubs. Since I have a switch inside of my truck to engage the 4X4 I was unaware of the outside hubs being engaged. After the repairs were made and I got back to my hometown I returned to the shop and they stated that they had nothing to do with my transfer case and drive shaft issues and refuse to pay for my damages. Is there any reason they would need to mess with the 4 wheel drive hubs in order to install tires and a lift? I know that I did not engage the outside manual hubs but need to prove that the repair shop did. Any help you might be able to provide is greatly appreciated.

There is no reason to touch the hubs when replacing the tires. However, the problem is how do we prove they did it.
