1998 Ford Escort rear brake shoes replacement

My hand brake is sticking up like an erection and I need to replace the rear brake shoes to get it through MOT. I need to know how to get the rear wheels off and what torque is needed to tighten them back on. Diagrammes would help please

You need to check the cables as they may be one of them frozen
do u have drums or rotors in the back rotors check calipers
