1991 Ford Escort Help with my brakes

I have a problem with my brake after i use them they will lock up. i notice on the highway after i have used the brakes in town they will grab and slow my car down to about 35 mph when i am flooring it i really need help. the rims on the car get very very hot and i cant even touch them. i have changes the pads a calibers. i have been told it might be a cable pinched or clogged. and i have been told that it could be the brake booster, or even the master cylinder. can some one please help.

Check fluid is contaminated
if it does it only on one side or tire I would for sure suspect the brake hose
