My 1995 Ford Bronco 5.0 V8 will occasionally lose oil pressure according to the gauge when accelerating rapidly, but the gauge will then say that my oil pressure is normal five minutes later or if i shut the engine off and then restart it, what could be the reason for this?

You can remove the sender, install a test gauge, and take some readings, If they are normal, replace the sending unit. 5-10psi warm idle and increase to 40-60 as you rev it up.
