1995 Ford Aerostar Temperature fluctuations

My van's temperature usually runs right about on the M in Normal on the temperature gage on my dashboard. Yesterday and today I noticed that the gauge would race up to the L (particularly when I accelerated) and drop down to normal. But then the temperature needle would climb again for no apparent reason.

Is this a thermostat problem or something more serious such as a faulty head gasket or an engine problem?

with the needle fluctuating rapidly like that i would check to make sure the coolant level is at its maximum fill point.
