False overheating warning light turning on?

The warning light is coming on saying that it is overheating, however it is cool to the touch and there is no steam or anything of that nature. I just replaced the thermostat and the spark plugs.

Yep, it sounds like the engine coolant temperature sensor is stuck at the upper range. Here is the coolant sensor location so you can sway it out, let me know how things go. Check out the diagrams (below). Please let us know what you find. I left location for both the 3.6 and 3.4.

We replaced the ECT tonight and at first it was doing good so I drove it to the gas station and for some reason it did it again.

You could have a defective thermostat, which brand did you use? I always use OEM parts, FYI. To confirm, remove the thermostat and drop it in a pan of boiling water to see if it opens.
