When my car is turned on and is idling you can hear a gurgling/bubbling sound coming from the back exhaust. Also, when accelerating the car sounds louder than it should as if it is a six cylinder or higher. What is the issue? There are no visible holes in the exhaust.

may be a collapsed baffle in a muffler, get a mechanic to look at this on a hoist, with internal muffler problems you can often hear them rattle when you give them a hard thump with your hand, but just make sure the exhaust is not hot when you do this as you may burn your self.

Could the baffle be the reason it is making the water bubbling sound as well?

The exhaust may be echoing in the muffler without hearing the noise it is a bit hard to say, but it will not be coolant. if you could hear that much being coolant the exhaust would be running water out, get the muffler checked out first.
