Drive without issue and then suddenly the engine will shut off?

Car will start and drive without issue and then suddenly the engine will shut off, RPMs drop to 0 a chime sounds and engine light flashes, then roughly a quarter second later it comes back to life aggressively, RPMs shoot back up and it lurches forward. It mainly happens when accelerating from a stop or up to highway speeds. The car has also fully stalled on me one time. I was told it could be the crankshaft or camshaft sensors, so they have been replaced but it has still happened. Only code is for a downstream O2 sensor which I have been told would not cause this issue. No other codes have ever popped up and there are no lights actively on the dash.

Yep, it could be many things that can cause this kind of issue, but I would change the crankshaft angle sensor which when fail does not leave a trouble code so this is where we should start. Also, it could be the ASD relay which I would swap out as well. Here is a guide that can help and the location of the relay and sensor so you can check them out:
