Engine cooling temp gauge stays at 160?

Sometimes the temp gauge stays at 160, ac won't blow cold, fan stays on. Then sometimes the temp goes up to 200 and the engine makes a knock and the upper radiator hose will be extremely tight and I have to burp it at the reservoir.

I blown head gasket can do this, or a bad engine coolant temperature sensor. I would follow this video for the test before doing the sensor.
