This will be a problem with the latch or the latch adjustment. Here is how to replace the latch and do the adjustment to see if it helps. Check out the images (below). Let us know what happens and please upload pictures or videos of the problem so we can see what's going on.

Sometimes my inside or outside door handle will not open I changed the striker bolt and spacer did not work at all my inside door handle will not return to original position for opening the door
it feels like a spring or rod has come loose or unhooked

If I adjust the striker plate on my door will this cure my problem of the inside door handle going back to the original open position instead of the extended position?

You loosen the striker by using a TORX bit socket. I believe it is size 35 in the center of the unit, this will help you lower the striker in the jamb which solves the problem.
