Does the 02 sensor have anything to do with the car overheating?

No. If you have replaced the thermostat and your vehicle is still overheating the next thing that should be changed out is the water pump. Here is a generic link explaining how to replace a water pump, for reference, down below:

I changed the water pump about 3 years ago. I don't that's the problem but it could be.

I was hoping it might be a sensor, but it does make since to check.
