I live in South Florida where it's always very hot almost all year round. Would it be okay for the engine and transmission to take the thermostat out since I don't really needed?

You can remove it, it will take longer for it to get up to proper operating temperature and untill it does you will have poor engine performance, id put in a new one they only cost 5 bucks at the most!
