i got a code that says coolant temp is too low to activate thermostat, the collant level is fine and my car isn't overheating. I'm wondering if it is just the sensor or do i really need to change the thermostat?

Where is the temperature gauge reading? Do you get hot air from the heater?

If the gauge reads lower than normal, pinch off the upper radiator hose for a couple of minutes. If the gauge comes up, suspect a thermostat that is stuck open.

That will cause accelerated engine wear due to parts not fitting properly, excessive sludge in the oil, and rotten fuel mileage due to incomplete combustion and failure of the engine computer to reach "closed loop" where it looks at the oxygen sensor readings to fine tune fuel delivery. Tail pipe emissions will also be very high.
