Driving down the highway my engine would cycle from running hot to running cold over and over. Is this a thermostat sticking problem or something more serious?

Chances are the thermostat is sticking, but there are other things that can cause it. I would start by replacing the thermostat and make sure the cooling system is full.

Let me know what you find.
