I've read alot of other complaints about the 2.7 and how it is notorious for blowing head gaskets. We can't afford another car so need to fix this one. I can hopefully fix it myself how hard is it to fix and is it just going to blow again in the future.

Replacing the head gasket is an involved process. Are you sure it is bad? What are the symptoms? And to answer your last question, a head gasket can go again in the future or you may be fine.
