Very recently my car has started to overheat when the AC is on. Turning the AC off immediately cools it down.

Going through the "Normal" Things that cause a car to overheat:

Insufficient Coolant: Checked several times. Levels are fine.
Radiator Core Blocked: Visually looks fine - but wouldn't this cause it to overheat regardless of AC?
Radiator Cap pressure: Checked - is Fine
Fans Broken/Cracked: Fine
Fan Motors Working: Checked: Fine
Fan Relays/Fuse: Checked: Fine
Thermostat Faulty: Have NOT Checked this yet. But as above, wouldn't a bad t-stat overheat regardless of AC?

Any assistance you could provide would be greatly appreciated, as I'm currently at a loss. And its' 110 degrees outside. ;)

Replace the thermostat, and you may need a new water pump, the impellers can and do disolve sometimes. You may have enough left to cool normal engine temps, but not the increased load of A/C in 110 degree heat!
