My engine revs up and down without giving it more gas. This tends to make the transmission jump into gear when it is trying to go up a gear. In addition, on long rides the truck will sometimes stall when I come to a stop light or a turn at the end of the trip. The engine will rev up even at high speeds with the cruise control on.

It sounds like a bad idle air control valve (IAC) or throttle position sensor (TPS). Has the check engine light come on?
