1999 Dodge Caravan Temperature gauge cold and stalls

When I initially start my van for the day, the temperature gauge is pegged at COLD. Within a mile of driving, the van stalls. I immediately start it again and the temperature gauge climbs to the midway point. I have had the fuel filter changed. and no code has shown as per my mechanic. He is stumped. Any suggestions?
