How labor intensive is replacing a water pump in my car? I've also noticed now that there is smoke coming from under the hood occasionally. I always make sure it doesn't overheat.

Very intensive. I did it in 6 hours. It was 98 Chrysler Cirrus V6. Same engine you have. You have to remove the crank pulley, remove the timing covers (you may have to move the P/S pump out of the way),remove the timing belt, remove the water pump, and reinstall. Make sure that the o-ring in the back of the water pump seats in properly before you bolt it up. It is advisable that you replace the timing belt at the same time.
