What would be responsible for causing my vehicle to stall, but keep power to the instrument panel, heating, and lights? Battery has been eliminated.

Loss of fuel, loss of spark, or most commonly, loss of both. You need to provide some details, observations, or test results to analyze. A failing charging system, which is extremely common on GM vehicles, can cause numerous computers to shut down. Some engine sensors often fail by becoming heat-sensitive, then they work again once they cool down, typically for about an hour.
