Hello,
Have you stopped to check the coolant level once the warning light comes on?
When really hot, such as on a long-distance drive, the cooling system will build up pressure which will physically compress the coolant and lower the actual level.
When cold the coolant level should be on or near the maximum mark.
When really hot the coolant level should not be lower than the minimum mark

Hope this helps.
