Why does the coolant light turn on when driving 75 MPH on the motorway?

I drive my car daily as a carrier so it I stop and start all day. My car runs great no lights, but when I go on the motorway and hit 75 MPH-ish my red coolant light comes on and beeps. The car still runs great, no issues and after 5 minutes the light goes out. Still no issues, runs great.

This means the engine is overheating, I would service the cooling system and make sure you do not have an obstruction like a plastic bag stuck in front of the radiator. Also, check the coolant level in the radiator and coolant reservoir. This guide and video should help:
