Coolant light flashing when driving seventy plus MPH?

A couple of months ago I was driving on the motorway and a few minutes after reaching 70 MPH the coolant light beeped and started flashing. When decreasing the speed, it went off but when accelerating to 70 MPH + it came back on.
The coolant level was fine, so I spoke to a local garage he suggested to replace coolant tank and sensor so I did.

A few days ago, when I went on the motorway it was fine at 70 MPH but when overtaking at around 80 MPH it beeped and flashed again.

The car is fine driving apart from at speeds on motorway.

It sounds like the radiator could be clogged up and not cooling the engine as it should, also can you hear the radiator fan working when the engine is overheating? This guide can help us see what's going on:

When the engine heats up you should be able to hear the fan working, can you tell me if the fan is electric? If so, I have seen the fan motors go bad intermittently. Here is a generic guide to help you see what you are in for when replacing the fan motor:
