I remove a 10 1/2" clutch kit. Will a 11" clutch kit work?

As long as it will bolt to flywheel with no interference, you may have to use another flywheel if you do that.

It is all in there, but I am having adjustment issues.

Check for worn parts like release arm is bent or worn out at release bearing. Check for worn adjuster rod or the wrong one. The proper adjustment is about 1/8" pedal free play, also if you go from a 10.5 to an 11 it may take a different release arm. See pictures. The arrows point to where it could be broken, also make sure bushings in bell crank are good and where adjusting rod is see if it may have a bushing there. There could be a combination of things that can give you adjustment problems.
