1998 Chevy K1500

Here's the problem. I have a 98 Chevy K1500 4x4 Vortec V6, changed the oil and after driving for a day the oil plug came out. Lost all the oil. But shut the truck off immediately when noticed that there was no pressure and no oil. Replaced oil and plug and truck started and seemed fine. Until the 2nd start after that and it let out a huge cloud of steam and still steams some since. Have since had it tuned up, pressure checked and all seemed fine until just the other day the oil gauge is bouncing around and it has developed a loud TICK under the hood. Any thoughts? No oil in the water or water in the oil. Also it does not "tick" all the time. Sometimes it will start with a tick and quit after running for a bit or it will start ticking after it has been running for a period of time.

Most likely a lifter suffered some damage and is occasionally not "pumping" up. Internally there is an issue not allowing it to keep pressure. If there is no misfiring accompanying the noise is can be tricky to track down. Have it verified by stopping into a shop while the noise is present, do not shut off the engine and they can give you an estimate for the repair.

If it's steaming then you probably blew a head gasket in the least, have the coolant system pressure checked. Engine noises must be heard to give a better diagnosis as we can't hear them it may be an engine bearing starting to go. Because oil pressure is moving around by your description have it manually pressure checked.
