what could be causing the light to come on but yet when levels are checked they are ok? I am trying to avoid taking it to the dealership and paying 50+ for diagnostics, so any help/suggestions are appreciated. What would you do?

sounds like a low coolant switch is sticking. you can try to tap on the side of the over flow tank and see if it goes out. other wise you will have to replace it.
