1995 Chevy Suburban Starving for gas?

My 1995 Chevy Suburban seems like it is starving for gas. It starts up fine but when I put it in drive and ride down the street it starts hesitating real bad like it's going to cut off. It is also rough in idle and if I get on the expressway when it is running correctly my check engine light comes on. If I step on the gas too hard while it's hesitating then my truck will cut off! My fuel pump, fuel filter, and fuel pressure is good. I've changed the fuel injectors to see if that is the problem and it runs right for a short time but my symptoms come back. Please help!!

Have you checked to see if the catylatic converter is plugged?
