1979 Chevy Corvette overheating

I have a modified 350 ci (400+ HP) in my vette and am having trouble with it getting hot. I have put an Edelbrock high flow water pump on, a new 3 core radiator and even removed the thermostate but it still gets to 220 deg to 225 deg F after about 15 miles. I was wondering if the 2" duel exhaust could be creating too m uch back pressure and thus the overheating. The exhaust is the same as when the engine was stock at 195 HP.

I would check the timing first, then assuming the cooling system is good, take it to a chassis dyno (usually around $100) and have the air/fuel ratio measured with a wideband O2 sensor.
