I would start by having the O2 sensor tested. Also, is there a check engine light on?

No check engine light on but I will replace the o2 sensor. Thank you

ps I have since replaced the catylitic converter I will have it checked again could a bad coil pack cause this?

A weak spark could cause the fuel to not burn properly, so yes. Have the O2 sensor checked prior to replacing. I don't want you to spend money if it's ok.
