What product (if any) would you recommend to help clean the varnish / sludge in the crank case?
Iv'e seen the "Gunk Motor Flush" at the autoparts store but I've also heard of using transmission fluid and even straight kerosene.
Will any of these help or will it do more damage than good?

IMHO. Don't do it.

There are two arguments to this. I take the one the says "lossening up stuff and having it drop to the bottom of the pan may cause the oil pump screen to clog). Also anything dropping down may plug return galleys.
