When we first start it and take off, the temp will increase until it pegs out, sometimes the check gauges light even comes on. The heater will start to work and temp will run fine. Every now and then it will do this two times. Once the engine is warm it will run normal. What is causing this?

check and make sure your coolant is full. also it could be caused by a bad thermostat.
