Intermittent issues like this can be hard to diagnose. - Although late-model GM trucks are known for fuel pump issues, I don't think I would go to the trouble of replacing it just yet.
If your service engine light is on, the onboard computer has picked up SOMETHING. Have the codes read at your local parts store.
If the light is not on, I would test the fuel pressure. Specs for this will be in a service manual, the most common being Haynes or Chiltons.
I also wouldn't count out the fuel pump relay.
Your best chance of figuring it out lies in duplicating the problem.
